Black Bean Nachos with Kale Salad

Nachos can be a delicious snack or meal, but they are not usually considered a healthy food due to their high calorie, fat and sodium content. However, you can make some changes to make them healthier by adding a salad as a side dish.

1. Grilled Chicken with Nachos-Avocado Salad

Ingredients: –

  • 1 pound boneless, skinless chicken breasts, cut into strips –
  • 1 tablespoon of olive oil –
  • 1 teaspoon of chili pepper
  • 1/2 teaspoon of cumin –
  • 1/2 teaspoon of garlic powder –
  • Salt and pepper to taste –
  • 8 oz fried tortilla chips –
  • 1 cup of grated low-fat cheddar cheese –
  • 1/2 cup of salsa –
  • 1/2 cup plain Greek yogurt –
  • 1 chopped avocado
  • 1 cup of halved cherry tomatoes
  • 1/ red onion thinly sliced –
  • 1 lime, juice
  • 2 tablespoons of chopped coriander
  • Salt and pepper to taste

Instructions:

1. Heat the grill to medium heat.

2. In a medium bowl, toss chicken with olive oil, chili powder, cumin, garlic, salt and pepper
