Black Bean Nachos with Kale Salad
Nachos can be a delicious snack or meal, but they are not usually considered a healthy food due to their high calorie, fat and sodium content. However, you can make some changes to make them healthier by adding a salad as a side dish.
Here are two healthy recipes you can try:
1. Grilled Chicken with Nachos-Avocado Salad
Ingredients: –
- 1 pound boneless, skinless chicken breasts, cut into strips –
- 1 tablespoon of olive oil –
- 1 teaspoon of chili pepper –
- 1/2 teaspoon of cumin –
- 1/2 teaspoon of garlic powder –
- Salt and pepper to taste –
- 8 oz fried tortilla chips –
- 1 cup of grated low-fat cheddar cheese –
- 1/2 cup of salsa –
- 1/2 cup plain Greek yogurt –
- 1 chopped avocado –
- 1 cup of halved cherry tomatoes –
- 1/ red onion thinly sliced –
- 1 lime, juice –
- 2 tablespoons of chopped coriander –
- Salt and pepper to taste
Instructions:
1. Heat the grill to medium heat.
2. In a medium bowl, toss chicken with olive oil, chili powder, cumin, garlic, salt and pepper
3. Grill the chicken for 6-8 minutes on each side or until cooked through. .
4. Place the tortilla chips on a large baking sheet.
5. Sprinkle grated cheese on the tortilla chips.
6. Top with grilled chicken and salsa.
7. Bake in preheated 350°F oven for 5-7 minutes or until cheese is melted.
8. In a separate bowl, mix together Greek yogurt, avocado, cherry tomatoes, red onion, lime juice, cilantro, salt and pepper.
9. Serve Nachos warm with avocado salad.

- 1/ cup chopped red onion –
- 1/ cup sliced almonds –
- 1/ cup of dried cranberries –
- 2 tablespoons of olive oil –
- 2 tablespoons of apple cider vinegar –
- 1 tablespoon of Dijon mustard
Instructions:
1. Place the tortilla chips on a large baking sheet.
2. Sprinkle grated cheese on the tortilla chips.
3. Top with black beans and salsa. . Bake in preheated 350°F oven for 5-7 minutes or until cheese is melted.
4. In a separate bowl, mix Greek yogurt, cilantro, lime juice, salt and pepper.
5. In another bowl, mix kale, red onion, almonds and cranberries.
6. To make the dressing, mix the olive oil, apple cider vinegar, Dijon mustard, salt and pepper in a small bowl.
7. Pour the dressing over the kale salad and toss.
8. Serve Nachos warm with kale salad.
